We had a Great 2009 deer season!               We are hard at work for 2010!

 

             SPANISH BEAN SOUP

1 Box of Chicken Broth

1 Box Beef Broth

2 cans Garbanzo beans

1 can pinto beans

½ pound Salt Pork, cut in thin strips, then cut in small pieces

1 large onion finely chopped

2 chorizo (big hot dog size)

3 large potatoes, peeled and diced

1.5 Tablespoon Paprika (that's Tablespoon not teaspoon) Salt/Pepper to taste

Slowly fry salt pork

Using slow cooker, pour Chicken and Beef broth into cooker. 

Add beans, potatoes, salt pork, onions, chorizo (sliced crossway and quartered), paprika and salt to taste—1 tablespoon (start light as some ingredients are salty) and pepper.

 

Cook on high for 4 hours or slow for 6 hours.

 

                       Black Bean soup with Tomato Salsa

Ingredients:            

  1. 1-1/4 cup dried black beans
  2. 1/4 cup olive oil
  3. 1 Large onion
  4. 3 cloves garlic, minced
  5. 1 tsp ground cumin
  6. 2 tsp chili powder
  7. 8 cups water
  8. 2 tomatoes, peeled, seeded and chopped
  9. 1/4 cup red onion, minced
  10. 1/2 fresh Jalapeno pepper, seeded and minced
  11. 2 tbsp fresh Cilantro, chopped
  12. salt and ground pepper

Cooking instructions:                                                                                      Pick over beans and discard any damaged. Rinse the beans. Place them in a bowl, add plenty of water to cover them; soak for about 3 hours.

                         Baked Potato Soup

Ingredients:

  1. 2/3 Cup butter
  2. 2/3 Cup flour
  3. 7 Cup milk
  4. 4 large or 6 medium baked potatoes, cooled, peeled & cubed
  5. 12 strip bacon cooked and crumbled
  6. 1-1/4 Cup shredded cheddar cheese
  7. 1 Cup sour cream
  8. 3/4 tsp salt
  9. 1/2 tsp pepper
  10. 4 green onions sliced

In dutch oven melt butter, stir in flour. Heat and stir until smooth. Gradually add milk stirring until thickened. Add potatoes and onions. Bring to boil, stirring constantly. Reduce heat, simmer 10 minutes.        Add remaining ingredients, stir until cheese melts. Serve immediately.

Optional: sprinkle each bowl with cheese, bacon and green onions.
